
Ingredients:
- 1 cup pitted dates, chopped
- ¼ cup honey
- ¼ cup creamy peanut butter
- 1 ½ cups oats
- 2 tsp cinnamon powder
- ½ cup dark chocolate chips
- 1 tbsp shredded coconut
- ¼ cup chopped almonds + raisins
Method:
- Toast the oats in the oven for 10-15 minutes at 180°C until they are slightly golden brown. (Since, everybody’s oven is different, it may take more or less time depending on your oven. So keep a close check on your oats.)
- Blend the dates in a food processor or with the help of a blender to form a dough adding water as needed. (It depends on how dry your dates are. I used around 2-3 tbsp of it)
- Transfer the dates dough in a large mixing bowl.
- Add honey, peanut butter, oats, cinnamon powder and mix well.
- Add chocolate chips, shredded coconut and, chopped almonds and raisins. Mix thoroughly.
- Transfer the mixture to the pan lined with parchment paper. Flatten the bars either with a spoon or with your hands.
- Place the bars in the freezer for 30-40 minutes or until hard.
- Remove the bars from pan and cut into squares or bars.
Storage:
Store in fridge.
