Eggless Banana Bread

Hello Friends! How are you guys? Hope you all are going just awesome…

Well one day my husband came up to me and said that I love the Banana Bread you make and I’m kinda craving for it. And then suddenly he declared that “Today, I will be baking.” And guys the irony is that my husband loves to bake but he doesn’t know how to bake. Lol! So he requested me to be his guide/ coach for the banana bread for which I had no other option than to agree on… Hehe…

So, here is the recipe for the bread which he tried. And guys, don’t worry – “The Recipe Works!” The bread turned out to be fantastic. It was soft, moist and perfectly sweet. Do give it a try. I’m sure you would love it too. P.S. The original recipe is from Chef Dassana.

Ingredients

  • 4 medium sized ripe bananas or over ripe bananas 
  • 1.5 cups whole wheat flour 
  • ½ cup any flavourless vegetable oil 
  • ½ cup coconut sugar
  • ½ teaspoon vanilla essence
  • ¼ teaspoon cinnamon powder
  • 2 to 3 pinches nutmeg powder
  • 2 tablespoon chopped almonds – optional
  • 1.5 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt

Preparation

  1. Preheat the oven to 180 degree celsius.
  2. Grease a loaf pan with oil or butter. 
  3. In a large bowl, take bananas and sugar, and start mashing them together with a fork or a masher until you get the consistency of puree. 
  4. Add oil and mix.
  5. Now add vanilla essence, cinnamon powder, nutmeg powder and mix well. 
  6. Now directly sieve the whole wheat flour over the batter along with the baking soda, baking powder, salt.
  7. Now gently fold the sieved flour until everything is well combined. Do not over mix.
  8. Add chopped almonds and fold them into the batter.
  9. Now your batter is done and just pour it into the loaf pan.
  10. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. 
  11. When the bread cools down, remove the banana bread from the pan.
  12. Slice and serve.
  13. Enjoy!!!

Tips

  • You can skip adding almonds. If you want, you can add walnuts or sunflower seeds instead of almonds.
  • If you don’t prefer the taste of cinnamon and nutmeg powder, you can skip them entirely.
  • Sweetness of the bread can be adjusted as per your liking.
  • This banana bread can be made with all purpose flour also.
  • This banana bread stores well in the fridge.
