
Soups are amazing: it’s hard to go wrong. Add some vegetables, a little spice here, a little spice there and boom! A warm, comforting, filling, nutritious and delicious bowl of soup is ready. 😋 This soup is thick and creamy and is wonderfully inviting on cold, dark winter days. 😇
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 garlic cloves, chopped
- 1 tsp turmeric powder
- 5 large-sized (or 10 medium-sized) carrots, rinsed and sliced
- 5 large tomatoes, chopped
- water, enough to cover
- 400ml coconut milk
- 1 tsp dried parsley
- 1 tsp dried thyme
- salt and pepper to taste
Preparation
- Heat oil in a pot.
- Add onions, garlic and turmeric powder and sauté until soft and fragrant.
- Add tomatoes and carrots and cook for 3-4 minutes while continuously stirring.
- Now add water (enough to cover the carrots and tomatoes), salt and pepper. Cover and simmer for 25-30 minutes until the carrots are tender.
- When the soup is ready, use a hand blender to puree until smooth.
- Add dried parsley, dried oregano and coconut milk to the smooth puree and stir until well combined.
- Serve! You can also sprinkle some dried parsley on top for garnishing.
Tips
You can make it in a big batch and store it in the refrigerator. It can stay good for 4-5 days. Just heat it before having it.
