Since I’m always trying to make healthy recipes, how can I skip my favourite chocolate cake? This is a healthy chocolate cake without refined flour, refined sugar, refined oil, eggs, milk and butter. So do try this recipe and let me know how it turned out for you.
Ingredients
- 1 cup water
- ⅓ cup virgin coconut oil
- 1 tsp vanilla essence
- 1 tbsp lemon juice
- 1 cup jaggery powder
- 1½ cups wheat flour
- ½ tsp salt (I use rock salt)
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ cup cocoa powder
- Chopped cashews for topping (optional)
Preparation
- Preheat the oven to 180° celsius.
- Grease a baking pan with oil and line it with parchment paper.
- In a large bowl, take water, virgin coconut oil, vanilla essence, lemon juice and jaggery powder. Now with a hand blender, beat till the jaggery powder has dissolved.
- Add whole wheat flour, baking powder, baking soda, salt and cocoa powder. Gently mix with a spatula. Now beat with a hand blender till everything is mixed well.
- Pour the batter into the prepared pan and level the top with the help of a spatula or with the back of a spoon.
- Sprinkle some chopped cashews over the top of the cake. This step is optional.
- Bake for 25-30 minutes or until the toothpick inserted in the center comes out clean.
- Leave it in the pan for 10-15 minutes. Then remove from the pan and allow it to cool completely at room temperature.
- Once cooled, slice and serve.

Tips
- If you don’t have lemon juice then you can use vinegar instead.
- If you don’t have a hand blender, then you can mix everything by hand using a whisk.
