
I have got another Diwali treat for you… This besan barfi is super easy and super healthy. Just takes under 30 minutes to make. Super healthy , tasty and made without refined sugar. So, why don’t you make this barfi as bhog to impress our Lakshmi Ji 😇
Ingredients
- 1 cup besan
- 1/4 cup ghee
- 8 cardamom (powdered, husks removed)
- 1/2 cup organic jaggery powder + 2 tablespoons
- 1/3 cup water
- 1 handful of almonds- roughly chopped
- 1 handful of cashews- roughly chopped
Preparation
- In a saucepan add jaggery powder and water. Melt the jaggery on a low flame. Once it comes to bowl, lower the heat and simmer till it gets to a sticky consistency. We don’t need it to 1 string consistency, we just want it to be sticky. Set aside.
- In a large thick bottomed pan, add besan. Roast on low flame while stirring continuously.
- Once the raw aroma of besan goes away, add 1/4 cup ghee.
- After 25-30 minutes, when the mixture looks slightly brown and has become creamy, add the jaggery syrup. Be careful as the mixture splutters.
- Stir for 1-2 minutes.
- Once the mixture starts to leave the sides of the pan, turn off the flame and transfer it into the lined and greased pan.
- With the back of a spoon smooth the top. Add the chopped nuts and press it lightly into the barfi so it sticks.
- Once slightly cooled, make marks and when cooled completely slice it.
- Enjoy!!!
Tips
- While making the jaggery syrup, keep stirring it at intervals as it can easily stick to the bottom of the pan.
- Roast the besan on low flame to get the best taste.
- Ensure that you keep stirring besan continuously as it can burn very quickly.
- You can add any nuts according to your personal preference.
