Well.. Nothing feels amazing than starting your morning right… Right? And what would be a better way to start your morning than a hearty breakfast. And who says breakfast has to be boring for it to be hearty. Try this moonglet recipe which  is simple and delicious. It is protein filled and weight loss friendly. I’m sure once you try it, you won’t be able to resist making it again….

Ingredients

  •  1 cup moong dal (yellow colour)
  • 1 tsp roasted cumin powder (jeera powder)
  • 1 pinch of hing powder
  • Salt to taste
  • ¼ cup onion, finely chopped
  • ¼ cup tomato, finely chopped
  • ¼ cup capsicum, finely chopped
  • ¼ cup carrot, grated
  • ¼ cup beetroot, grated
  • ½ cup green onions, finely chopped (optional)
  • 2 tablespoons of green coriander leaves, finely chopped
  • 1 sachet eno (fruit salt powder)
  • 8 tsp oil

Preparation

  1. In a bowl, soak moong dal in hot water for 1-2 hours. Make sure you cover the bowl with a lid.
  2. After 1-2 hours, drain the water from the moong dal. Wash it properly.
  3. Now add the moong dal into a blender along with 3-4 tablespoons of water or as required. Grind to a thick paste.
  4. Add salt, hing powder and cumin powder. Mix well.
  5. Add onion, tomato, capsicum, carrot, beetroot, green onions and coriander leaves. Mix well.
  6. Add eno and mix well.
  7. Heat a pan. Pour 1 tsp oil. 
  8. Pour and spread the batter on the pan  and make sure the layer of the batter is thick.
  9. Cover and cook until the base is cooked and has turned golden brown.
  10. Drizzle 1 tsp oil on the top side. Flip. Press gently. 
  11. Poke holes with the help of a fork. Cover and cook till the other side also turns golden brown.
  12. Remove from heat.
  13. Slice and Serve.
  14. Enjoy!!!

Tips

  • Add eno just before making the moonglet. 
  • The moong dal batter can be stored in the refrigerator for 4-5 days. Just do not add salt, spices and veggies. Also, store it in an air-tight container.
